How to Cook Country Style Ribs

Cooking country style pork ribs may seem to be a lot of work, but all you really need is an idea of the ingredients and steps needed to make a hearty dish. Here’s an easy recipe for country style ribs.
Country Style Ribs
Most recipes for country style ribs require pork ribs. Pork ribs are rich in flavor, contain just the right amount of fat, and have a great texture that can be used for many dishes. The great thing about ribs is that the bone content, while imparting flavor, also helps seal and lock in the moisture and juices in the meat. While there are many recipes for country style ribs, they all share the same traditions with Southern cooking and soul food.
The key to making a perfect dish of country style ribs is to use the right ribs, and down-home Southern ingredients. Much of the weight and volume of pork ribs come in the way of bone, so you should select ribs that have a good amount of fat and meat. The ingredients you use with the pork should also be full of flavor, but you should still be able to taste the flavor of the ribs.
Ingredients
Here are the ingredients you need to make a dish of country style ribs:
- Two pounds of pork ribs
- Garlic powder
- Seasoned flour (all-purpose flour seasoned with cayenne pepper, salt, and black pepper)
- 1/2 cup of white sweet onions, diced
- 3 whole garlic cloves, crushed and peeled
- 1/2 cup of carrots, diced
- 1/4 cup of celery, diced
- 1/4 cup bell pepper, diced
- 2 tablespoons mustard
- 1/4 cup apple cider vinegar
- 1/2 cup packed brown sugar, or 1/4 cup molasses
- 2 tablespoons Worcestershire sauce
- 1 tablespoon of cornstarch dissolved in 2 tablespoons of water
Steps
- Dredge the pork ribs with a very thin coating of garlic powder before dredging it in flour.
- Brown the pork ribs in a small amount of olive oil in the same pot you’ll be cooking in.
- Take out the pork ribs, and sweat the onions, garlic, carrots, celery, and bell pepper in the fond and oil remaining from the browned ribs.
- Add the mustard, vinegar, molasses, and Worcestershire sauce to the mix. Season if necessary, and allow the sauce to simmer.
- Add the cornstarch solution and mix it well with the sauce to thicken. Add the ribs, and allow the dish to simmer until the flavors are absorbed by the ribs.
- Serve with sweet potatoes, polenta, or soft freshly baked bread.
