Hot chicken noodle soup is comfort food that we all know and enjoy. Not only is it excellent food for sick people, it makes for a very satisfying meal as well. Here’s how to cook chicken noodle soup for you and a whole party of six.
Ingredients
For the Broth
- 3 to 4 pounds cut-up chicken
- 4 1/2 cups cold water
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 celery stalk, chopped, including leaves
- 1 carrot, chopped
- 1 medium-sized onion, chopped
- 1 sprig parsley
For the Soup
- Chicken meat with broth
- 2 carrots, sliced
- 1 medium onion, chopped
- 2 celery stalks, sliced
- 1 can reduced sodium chicken broth
- 4 cloves garlic
- 7 oz. uncooked egg noodles
- Fresh parsley, chopped
- Baguette, sliced or crackers
Procedure
For the Broth
- Heat olive oil in the stockpot and add the onions. Cook the onions until translucent, and add the other vegetables. Leave it to simmer and stir occasionally. This would take around ten to 12 minutes, enough time for the vegetables to yield their juices.
- Add the cold water. Put in the salt and pepper as well.
- Allow the stock to simmer over medium heat. The stock should always be simmering, not in a rolling boil.
- Skim off foam or scum forming on top of the broth.
- Reduce heat to a simmer for around 45 minutes or when the chicken is fully cooked (180 degrees Fahrenheit internal temperature).
- Remove the chicken from the broth. Remove the skin and bones and chop into smaller pieces.
- Use a sieve to strain the vegetables. Discard them.

For the Soup
- Put the broth in a clean stockpot and add five cups of water.
- Add the vegetables and bouillon and allow the broth to reach boiling before reducing heat to a gentle simmer. Cover the stockpot and let simmer for another 15 minutes or until the carrots are tender.
- Add the noodles in. Let the heat go higher until the broth boils again and lower to simmering again. Let it simmer for another seven to ten minutes uncovered, or until the noodles are cooked. Add the chicken in between the seven to ten minutes.
- You can add freshly ground pepper and a sprig of fresh parsley on top to make it look more appetizing.
- Serve the chicken noodle soup with crusty baguette slice or mashed potatoes.
